Serves 4 Quick, simple and delicious
4 boneless centre loin pork chops, about 1 inch thick each
1/4 cup Little Kitchen Gourmet Roasted Tomato Balsamic Relish
3-4 tbsp. Panko breadcrumbs, or other unseasoned dry bread crumbs
1 tbsp. olive oil (approx.)
About an hour or up to a day before serving, spread each chop with Relish and sprinkle the surface with bread crumbs. Press the breadcrumbs in gently to help them adhere. Repeat on other side of each chop.
If preparing ahead of time, refrigerate until ready to proceed.
Preheat oven to 400 degrees F. Heat a lug of olive oil in an oven-proof skillet large enough to hold all the chops without overlapping. Brown the chops on both sides at medium high heat.
Place pan in the oven, uncovered, and roast until the meat reaches 160 degrees F in the centre…about 15 minutes. Let sit for a few minutes to allow the juices to settle.
Serve with Little Kitchen Gourmet Meyer Lemon and Ginger Marmalade or Cranberry Sauce with Clementines and Triple Sec on the side.
